Menu Plan for a Short Week and a LONG Weekend!!


Well, another weekend has flown by and now it's a short week ~ and a LONG weekend! This weekend we got to actually chill out and relax, which almost never happens. There is usually a birthday party, or family dinner or some event that we have on the calendar. It was nice to relax a little!!

This weekend was also the start of a Spring 2012 Weight Loss Challenge. I am following along with 52 Weight Loss Missions and trying to add more exercise and healthy dinners to the menu plan this month.

Last week we tried adding fresh fruit to each of the meals at dinner time (my girls are not big veggie eaters). It worked, and the girls had some healthier options in each of their meals.

This week, the plan to add a salad to every dinner continues! It worked well for me last week, so I am going to make a big batch of my favorite White Balsamic Vinaigrette dressing to last the week!
Recipe
This week we are having a fundraising bake sale at work. I volunteered to bake something... now to figure out what! Hopefully later on this week you'll see some delicious treat recipes for Easter!

It's going to be pretty tough to stay on track with my healthy eating challenge this week when we have two Easter dinners and a whole lot of baking for this weekend, but I will do my very best!


On the menu this week:

Monday: Shake and Bake Fish with mixed vegetables and steamed rice
Tuesday: Beef Tacos
Wednesday: Roasted Stuffed Chicken with mashed potatoes and steamed asparagus
Thursday: Leftover Chicken Pot Pie
Friday: Salmon, pasta in white wine sauce
Saturday: Easter Dinner #1
Sunday: Easter Dinner #2
