"Rachel Salad"


I know.  Lame title for a blog post.  What are you gonna do.  It's my go-to salad recipe, so what better name than Rachel Salad?

There are a few ingredients that I have on hand pretty much all the time to whip up my favorite salad.  It's nothing fancy, adapted from Epicure Selections website, but it's delicious, easy and a salad I'll actually eat!!

Ingredients
2 Tbsp (30 ml) olive oil
1 Tbsp (15 ml) Dijon-style mustard
1 Tbsp (15 ml) Epicure’s White Balsamic Vinegar
1 Tbsp (15 ml) water
Epicure's Sea Salt, to taste
12 cups (3 L) mixed salad greens
1 cup (250 ml) dried cranberries   
1/2 cup (125 ml) crumbled goat cheese
1/3 cup (80 ml) slivered almonds   

Instructions
1. Whisk first 5 ingredients together in a large serving bowl.
2. Add mixed salad greens and toss to coat.
3. Sprinkle salad with cranberries, goat cheese and slivered almonds. Serve immediately
